I loved making tuna salad sandwiches or just scarfing it down with some saltine crackers, YUM! That brings back memories #nostalgic. However after going plant based, and discovering that tuna is not the healthiest option nor the most compassionate, I decided to find a vegan tuna salad recipe. I hadn’t realized how simple it would be. All of the recipes I found basically used the same ingredients my mom did, only they sub the tuna for chickpeas and nori flakes(for the fishy taste of the sea). It’s pretty genius! It’s also incredibly simple to make. I’m giving you the simple base recipe to this salad, but there are plenty of variations. My mom used to add diced apples to hers (it actually tasted pretty good). You could also add half vegan mayo and half vegan cream cheese. You could even vary the amounts of ingredients in this salad. For example, if you’re not a huge onion fan you could add less of the onions into the mix. You could also add more chickpeas or add more or less of any of the other ingredients. It’s pretty versatile that way. You can even add chopped nuts or other veggies like chopped broccoli, bell peppers, or cucumbers. You can’t go wrong with this one, really the possibilities are endless. Make it your own!
