Cooking tuna Paul from The Hook and The Cook shows you a simple way to cook a tasty dish of Yellow fin tuna. Yellow fin Tuna loin with Pickled Vegetables Wasabi Mayo and Baby Herbs: Recipe: Serves 4 people as an entree Recipe: 2 X 200g loin of yellow fin tuna 200g mixture x sesame seeds black and white 1 x wasabi paste 1 500ml x Japanese mayonnaise 1 x lime 1 x chilli 200 ml Japanese soy sauce 1/2x bunch basil 1 X Grape seed oil 1 x pnt micro herbs Pickled vegetables Ingredients: 100ml white wine vinegar - 50gms sugar - 6 whole white peppercorn - 6 fennel seeds - Baby Fennel thinly sliced ( 1/2) - 50g carrot - 100g daikon shredded - 50g red radish - 30g eshalots - 50g golden beetroot To make pickling liquid combine sugar vinegar peppercorns fennel seeds bring to the boil. Place over vegetables and leave in a non-reactive bowl overnight in the fridge. Method: Finely cube vegetables for pickling. Julienne daikon radish and place in water reserve for later use. Marinate the tuna in soy sauce approx. 45 secs then smear with wasabi paste. Roll the tuna loin in sesame seeds. Wrap tuna loins in plastic wrap and rest in fridge for one hour. While tuna is chilling make wasabi mayo by adding juice of one lime, diced chilli and sliced basil to Japanese mayo and mix. Sear tuna in grapes seed oil quickly till rare then cool. Slice Tuna into 2 cm thick squares . Smear mayo on the plates add some pickled veg tuna the top with daikon radish and baby herbs.
