Un Tuna Salad
No fish are harmed in the making of this recipe. Carrot pulp from juicing approx 6-10 carrots (depending on size) Mayo (whichever kind you prefer) Celery, finely diced Firm Tofu or boiled egg Relish (whatever desired flavor dill, jalapeno, sweet relish) Eden Shake or Organic Nori Any ingredients that you would normally use in a traditional fish salad. (Except the fish...) Juice the Carrots. Sort through the pulp and place large bits into compost. If you are slow enough at juicing the carrots, you won't have many large bits. I don't recommend using small pre-peeled baby/petite carrots. Add the amounts of ingredients to taste and mix. I like to make this on gluten-free sandwich bread with pickles and a slice of vegan cheese.
